Simple Start: Roasted Vegetable Cous Cous!


I have yet again been in the kitchen whipping up a healthy meal. I decided to pre-prep my lunches to make it easier to stay on track. This Week was the lovely looking Veggie cous cous which was in my Simple Start guide.


  •  2 Peppers in your colour preference.
  • 1 whole can of Chickpea's
  • 75g Cous cous (Whole Wheat)
  • 1/2 a red Onion
  • Courgette
  • Cherry Tomato
  • Lemon (for the Zest)
  • Fry Light


First things first, chop up the Peppers, Onion, and Courgette..


Once you have it all chopped up into chunks, spread it out onto a baking tray and spreay with Fry light. Shake it up a bit, then pop in the oven for 20mins at 200'c.

Whilst this is cooking away put your wholewheat cous cous into a bowl and pour over 115ml of boiling hot water, cover and leave for 10 mins. 



 Pour the chickpea's into a pan and heat slowly until they are hot. Dont let them boil though!

 Once the veggies have roasted for 20 mins, pop the tomatoes on top and give them a spritz with the fry light and shake them up. Leave them in for 10mins, and then they will look like this...


*Droooooool*

At this point i tasted some of the peppers, and Ohhhhh myyyyy, they tasted amazing!


Now is the time to get the Lemon and give it a grate to get the lovely zest... I used the whole lemon and my cous cous tastes a bit like Cif... So I would say Use half.

Then you just need to mix the roasted veg, the cous cous and the Zest together and its ready to eat! 




Update on my weight loss journey so far... 

I lost another 1/2 lb this week, which brings me to 4lbs lost in total. I am proud that i haven't gained at all since i started back at weight watchers! 

I'm aiming for 1/2 lb a week, anything more is a bonus!

I believe today is a day where everyone show spread some love.

How about some random acts of Kindness just to make someone day.

 You could....

  • Put some change in the vending machine at work / college /school for the next person to get a free treat.
  • Smile at someone.
  • Give up your seat on the train/Tube or Bus.
  • If you think someone looks nice, then TELL THEM!
  • Bring a treat to work or school ... take valentines day cupcakes, or heart shaped sweets.
  • Be kind to everyone you meet. 
  • Buying yourself a coffee, then how about you  buy the person behind you one too.
Imagine how you would feel is someone did any of the above to you.... its heart warming isn't it.

Valentines Day Nail art!

This is a re-blog from last year, and oldie but a goodie!

 Firstly you need:



  • Plasters (or Band aids if your from the US)
  • Scissors
  • Base coat
  • Nail polish colour of choice
  • Accent colour nail polish for the hearts
  • Top coat


Paint your nails as you would normally, i used Nails inc Porchester Square, Then use a base coat, then leave to try for a while,  to be on the safe side i left them for an hour. 

Then the fun bit!



Cut off the sticky bits of the plaster, and fold in half, cut half a heart out and you have a perfect heart shape (admittedly i did this a few times to get the heart shape i liked)
Stick the stencil on your nail and press down the edges.

Paint your accent colour over the heart cut out, i used Nails inc in 'St James', you could also do it in gold which would look quite glam. Peel off the stencil carefully after about 10 seconds
Let the hearts dry a bit longer then apply a top coat, be careful to avoid drag and smudging the red hearts.

I did the hearts on my thumbs and both ring fingers, you could do it on all fingers if you like to be extra romantic.

Stila Color Balm Lipstick - Gemma

Would you ever wear purple Lipstick?

If you had asked me this a week ago i would have said Hell to the no. But i actually like it!!!



I tried out the Stila Color Balm Lipstick* in Gemma which is a sheer Purple. Its a cross between a lipstick, and a lip balm and has a lovely Minty scent/taste to it which is due to the Peppermint oil is has in it. Its very similar to the Revlon color balm stain that also has a minty taste.

The balm as a really good colour pay off, and is BRIGHT. I didnt think that purple would suit me, but i really like it. Its something i would never have imagined looks nice on me. In the day time this does come off very purple, but in the evening its almost a deep vampy purple, which even my husband Mike said he liked. Winner!

I love the packaging too, its very solid. I like that you dont feel that if you drop it the lids going to crack. The side of the tube has the Stila logo cut out with the colour of the product inside, which is really cool and easy to see what one your grabbing. Specially if like me you have about 20 lip products in your handbag. 

There is one other really awesome thing about this...

 
 Yep... the end of the tube (on the lid, obviously....) is a Mirror!!

The mirror sold me on this, its the attention to detail in a product that draws me in. Well done Stila! 

 The only thing thats a bit annoying for me personally is that the actual lipstick is huge.. i dont have plump lips so i end up either getting the lipstick on my teeth, or going over my lip onto my skin. (No body wants to be looking Like Miranda Sings now do they.... )
 Also i think its more awkward for me as its not got a slanted tip, its just flat. Its about the size of a 5p coin, i mean you cant complain your not getting about product for £16.


You can buy this from the Stila website for £16, they are very good quality, and they smell amazing, and dont dry your lips out at all. All i need to get now is a nice nude/pinky colour..

Quorn Cottage pie Recipe! (Weight watcher Recipe)

This week has been monumental in the terms of new food discovery.

I have found out that i LOVE Quorn cottage pie, who knew! 

A couple of years ago i tried Quorn mince, and hated it. I have broadened my horizons with food lately and I'm trying to be more of a healthy vegetarian. I've introduced milk back into my life which was something i didn't think i would ever do. I have skimmed milk every day with my porridge... Break through!

I was browsing the simple start guide and saw that it had a Cottage pie made with Quorn mince, that was included in the plan as a Zero pointed meal. I thought it looked too good to pass, and wrote the ingredients out for our monthly shopping trip.



You will need (For 4 people/extra freezer meals): 

2x carrots, 
1/2 a small swede
1x Onion
1x Leek
Mushrooms 
6 potatoes for Mash
Skimmed Milk
Tomato puree
Dried Mixed Herbs
Quorn Mince
 Fry Lite
 
Prep the din din's
First step is to chop chop chop everything up. 


Then put the potatoes on to boil to make the mash!

Then heat a pan, pour all the veggies and Mince in and pour in some stock bring it to the boil, I then added a tablespoon of Tomato Puree, and a pinch of Mixed herbs. Then let it simmer for about 20mins.

Whilst this is simmering away, you can make the mash with a bit of skimmed milk (Don't add butter if you want to do it the weight watcher way)

Once every thing's cooked to your satisfaction, pour into an ovenproof dish, and cover with Mash.

im droooooling, this is so good.

Put it in the oven for 20 mins, and let the Mash crisp up a bit. Then get it out the oven and drool over it... No don't do that. It will be really hard not to, just step away.... breathe in the Cottage pie goodness, grab a fork and put that yummy goodness on your plate with some veggies!

You can pretty much add what ever you want to this, its one pot wonder. I added mushrooms to the recipe, but you could add beans too for some more protein, or Pea's.

Saturday window shop..

I did the fatal thing of going shopping with no money..

Now i really want this Jacket and T-shirt, my theory is i can wear it to work, or wear the t-shirt casual.

The jacket is £19.99, and the t-shirt is £12.99 and its going on my wish list!

I love a good Saturday mooch about town, coffee and a chat with my friend. I love when the shops start stocking new season clothes, and new cosmetics start rolling out. It makes me want to buy new things. But im restraining my self and im not purchasing anything at the moment. Going to save my money and just lust over things instead... until i realise i really really need them. Hah :)

MUA Review: Undress your Skin Shimmer Highlighter

I have a review today of the MUA highlighter, i bought this from Superdrug and it was really cheap at £3. You can also buy it on the MUAstore website.


The only reason i bought this is because i wanted that dewy fresh faced look, and i couldn't get it from my usual make up routine. Since wearing this i have had people comment on my skin and how it looks radiant... ooooh how lovely!


It has a Pink two tone colour to it, and a little goes a long way, as i have discovered a few times when looking like a disco ball after sweeping too much across my cheek bones.

I wear it over BB cream and it has a really nice look to it, makes your skin look very dewy and fresh.



This is not a very good representation of the highlighter, but its the best i can do as my DSLR is broken. *Sob*

You can see how its lightened up my cheek bone, in the day light its really, really nice!

Sometimes thinking your going to fail is positive!

This week has been so, so with weight watchers.

I went shopping and planned my lunches out batch cooked some food to help me through the week. But this past weekend i have just eaten so much food. Im so hungry all the time.. !!!


Whyyyyyy.

Im trying to stick to the plan, but the temptation of eating crap i shouldn't is too much.

I need to remember my reasons for doing this, my Goal, my Health.

I went to the meeting knowing i had put on weight, didnt care and just thought whatever..

I stepped on the scales to be told i had lost half a pound!!!

I was like, Sorry i lost what?

the lady was like Ohh were you expecting more, i said NO i wasnt expecting to lose anything! 

*Party dance*

So far i have lost 3 lbs... im happy thatthe fats coming off slowly. Im in no rush this time and i want to enjoy life and not obsess about the diet.

*fingers crossed for my next weigh in, i've been naughty again*
